Ingredion has added four new products with a clean taste (CT) to its range of pulse-based proteins and flours. VITESSENCE™ Pulse CT proteins and HOMECRAFT® Pulse CT flours enable food manufacturers to formulate on-trend, consumer-winning, protein-enriched products in flavour sensitive applications.
The neutral flavour profile of these unique proteins and flours is created using proprietary heat moisture technology. The two new VITESSENCE™ CT proteins, made from pea and faba bean, can be used to boost the protein content of high moisture applications such as dairy and beverages. Made from pea and lentil, the clean taste of the HOMECRAFT® Pulse CT flours allows higher dosages to be incorporated into low moisture applications including sweet baked goods, pasta and snacks without any negative impact on the flavour or sensory experience of the product. These new ingredients are effectively widening the range of food products able to benefit from nutritious, pulse-based ingredients.

In addition to their unique neutral flavour, VITESSENCE™ Pulse CT proteins (1552 / 3602) and HOMECRAFT® Pulse CT flours (1203 / 2201) are naturally high in protein and fibre, and rich in nutrients including potassium, magnesium and iron, to support healthy recipe formulations. Label-friendly, they are a recognisable ingredient, listed simply as ‘pulse protein’ or ‘pulse flour’.
